Kristi’s Berry Delicious Protein Pancakes

My entire family thinks these pancakes are amazing! They are even better reheated, so make a bunch for the entire week. Top with warmed berries, yogurt, or a light drizzle of real maple syrup.

Ingredients:

5-6 Egg whites
1/4-1/3 Cup berries
1/4-1/3 Cup old fashioned oats
1 Individual packet of french vanilla Stevia or 1 tsp liquid Stevia
1 tsp pure vanilla extract
1 tsp cinnamon
1/4 Cup ground flax seeds

Directions:

Put all ingredients in a blender, and blend until smooth. Heat a large skillet over medium-high heat. Coat with non-stick spray and pour 2-3 TBSP of batter per pancake. Flip when lightly golden and cover the pan to help the egg whites cook evenly.

Optional: Add 1/2 Cup spinach leaves for a great way to get veggies into your first meal. You can’t taste it, and it makes the pancakes fluffier. It also turns them green, which is tons of fun for kids!
