Blue Cheese Stuffed Dates

A definite treat, these bite-sized appetizers are the perfect gourmet start to any special meal.

1/2 small red onion, chopped
1 tablespoon extra virgin olive oil
3 tablespoons freshly squeezed orange juice
1/2 cup blue cheese crumbles
21/2 ounces Neufchatel cheese
1/2 cup chopped pecans, divided
24 pitted Medjool dates

Heat olive oil in a small skillet over medium heat. Add onions and sauté until tender and beginning to caramelize. Add orange juice, deglazing the pan (scraping to get all the flavorful browned bits from the onions!). Simmer until liquid is almost completely reduced. Transfer to a glass bowl to cool.

To your cooled onion mixture, add cheese and 1/4 cup pecans. Combine thoroughly and stuff each date with cheese mixture. Top dates with remaining pecans and serve.

OPTIONAL: Add cooked, crumbled turkey bacon to your cheese mixture for a smoky, slaty twist.
