Tuna is packed with omega-3 fatty acids that promote weight loss, heart health, positive mood, mental clarity, and reduce inflammation throughout your body. Unfortunately, what we often do to tuna when we serve it as a salad or sandwich tends to do the opposite. So here’s my answer to your tuna troubles. You’ll forget all about mayo once you taste the crunchy, skillet-toasted bread and gooey melted cheese on this healthy craving satisfier!
1 2.6-ounce package of low-sodium chunk light tuna packed in water
1 tablespoon brown mustard
6 slices Ezekiel or other natural whole grain bread
3 tablespoons olive oil spread
1/3 cup low-fat shredded cheddar cheese
Preheat a large skillet over medium-high heat. Combine mustard and tuna in a small bowl; set aside. Coat the outside of each slice of bread with olive oil spread and place 3 slices on a plate, oiled side down. Divide tuna mixture evenly among the 3 slices, spreading to edges. Sprinkle each with cheddar cheese and cover with the remaining 3 bread slices, placed oiled side up.
Arrange each sandwich in the preheated skillet and cook until golden brown, about 2 minutes. Flip and brown the remaining side until cheese is melted, about 2 minutes. Add lettuce, tomatoes, cucumbers or other fresh veggies, as desired. Slice down the center, and enjoy!
