One of my favorite things about summer is the abundance of fresh produce. It’s a real treat to be able to enjoy fresh strawberries, gigantic zucchini, and crisp greens from just down the road—especially here in the Midwest where that’s not possible for much of the year.
Toward the top of the favorites list for me are fresh herbs and plump, juicy tomatoes. Whether you’re harvesting from your own garden or buying them at your local co-op, farmers market or grocery store, this salad will put those fresh ingredients to good use. Don’t be afraid to use tomatoes of various types and colors for this one! You’ll love how refreshing this salad is on a hot summer day—and picnic-friendly, too! I didn’t add it to the ingredient list, but it goes without saying that this one is best enjoyed with plenty of sunshine and good company.
4 large tomatoes, sliced
2 sprigs fresh basil, chopped
8 ounces fresh mozzarella, sliced (try to find one from a local farm)
2 tablespoons olive oil
1 tablespoon balsamic vinegar
On a serving platter, place a slice of mozzarella on each tomato slice. Cover with fresh basil, drizzle with olive oil and balsamic vinegar, and enjoy.
